Meet Esther-Ruth Teel: professional musician and cook, with strong attachments to Galiano Island. Her cooking talents came to light last year, when she was asked to join a Galiano Conservancy work team in the West Kootenays charged with dismantling the old ASPA classroom building (itself a fascinating story; please see my earlier posting) for relocation to Galiano. Working dozens of kilometres from the nearest power line, armed only with a Coleman stove and a few pots, Esther-Ruth created memorable meals in the middle of the forest. Fortunately, she gets to cook inside the ASPA building this time around, and will focus on delicious, hearty, healthy, low-on-the-foodchain meals.
Her “day” job is a student at the Victoria Conservatory of Music. She is multiply talented, but voice is her specialty. You may see her busking downtown Victoria this summer (playing a Celtic harp). Esther-Ruth's grandparents are Loren and Mary Ruth Wilkinson, who live just north of Retreat Cove on Galiano Island. Loren is a professor of theology at Regent’s College (UBC), and with Mary Ruth conduct graduate seminars on theology and ecology (the “boat” course) and food systems from their amazing home. Dr. Wilkinson is a Board member of the Galiano Conservancy Association.
